본 논문은 디아스포라 역사의 두 번째 시기에 형성된 연해주 고려인 음식문화의 초국가적 정체성에 대해서 고찰하고 있다. 동시에 1990년대 중앙아시아 고려인들의 연해주로의 재이주로부터 시작된 두 번째 시기의 역사를 포함한 연해주 고려인의 디아스포라의 역사도 살펴보고 있다.
소련 공산주의 체제가 해체되면서 태동된 중앙아시아 국가들의 극단적인 민족주의를 피해 자신들의 정신적 원천이면서 역사적 고향인 연해주로 귀환한 연해주 고려인들의 밥상에 오르는 음식은 한국의 전통음식과는 결이 다른 특성을 가진 유라시아 지역적 특성이 가미된 ‘초국가적-고려인식’으로 탈바꿈되었다. 오랜 기간 동안 디아스포라적인 삶을 이어오면서 구축된 자신만의 독특한 고유성, 즉 한민족의 음식문화에 유라시아 민족의 음식문화가 혼합된 초국가적 정체성을 보여주는 연해주 고려인들의 음식문화의 특징을 열거하면 아래와 같다.
첫째, 연해주 고려인들의 음식문화에는 오랜 디아스포라 기간 동안 형성된 ‘빵-육류-채식’식단의 초국가적인 특성이 나타나고 있다. 유라시아 토착민족들의 ‘빵-육류’를 중심으로 하는 음식문화가 고려인들의 전통 한민족 식단인 ‘밥-장국’ 중심의 채식문화 속으로 유입된 결과이다.
둘째, 유라시아 현지인들에게 가장 광범위하게 받아들여진 초국가적 음식문화 정체성의 특성을 지닌 고려인 음식은 ‘당근김치’이다. 일반적으로 연해주 고려인들은 당근 김치를 먹을 때 유라시아 민족의 전통적인 빵과 곁들인다.
셋째, 당근 채, 미역가지무침 등으로 대표되는 고려인 샐러드가 유라시아 현지인들이 좋아하는 음식으로 받아들여지고 있다. 이것은 러시아 음식문화(자쿠스키)가 유입된 고려인 음식이 유라시아 현지 지역민에게 전파된 결과이다.
넷째, 러시아 연해주로 귀환한 고려인의 밥상에 자주 올라오는 초국가적 특성을 가진 음식은 ‘오시’이다. 중앙아시아 음식이 고려인들의 입맛의 특성에 따라 변형의 과정을 거친 오시는 우즈베키스탄의 대표 음식이다. ‘기름밥’, ‘플로브’라고도 하는 이 오시는 우즈베키스탄 최고의 잔치 음식이기도 하다.
다섯째, 고려인의 전통 음식 ‘국시’는 현지 민족의 입맛에 맞는 퓨전 음식으로 변형 되면서 유라시아 지역에서 가장 대중성을 지닌 음식으로 거듭났다. 이러한 과정에서 국시는 유라시아 민족들에게 판매되고 소비되는 독립된 음식문화이자, 초국가적 문화적 특성을 지닌 상징으로 자리매김하고 있다.This thesis is studying the transnational identity of the food culture of Koryuin in the coastal region, which was formed in the second period of diaspora history. At the same time, it briefly examines the history of the diaspora of the Koryuin in Central Asia.
The Koryuin fled the extreme nationalism of the local countries and returned to the coastal coast, their spiritual source and historical hometown. The food on their table has different characteristics from traditional Korean food. It has been transformed into a "transnational" with regional characteristics of Eurasia.
The characteristics of the food culture of the Koryuin in Primorsky Krai, which show a transnational identity in which the food culture of the Korean people and the food culture of the Eurasian people are mixed, are listed below.
First, the food culture of the Koryuin in the coastal region shows the transnational characteristics of the "bread-meat-vegetarian" diet formed during the long diaspora period.
Second, Koryuin food with the characteristics of transnational food culture identity that is most widely accepted by Eurasian locals is "carrot kimchi".
Third, Koryuin salad, represented by carrot sticks and seaweed marinated seaweed, is being accepted as a favorite dish of Eurasian locals.
Fourth, foods with transnational characteristics that often appear on the table of Koryuin returning to the coastal region of Russia went through a process of transformation according to the characteristics of Koryuin's tastes, and the representative dish is 'Oshi'.
Fifth, the Korean traditional food "guksi" has been transformed into a fusion food that suits the tastes of the local people, and has become the most popular food in the Eurasian region.
