The purpose of this study is to investigate the specific characteristics of meal-kit products and to analysis the change in characteristics of them around COVID-19 in Korea. Meal-kit characteristics products data were collected online three times in September 2019 (T1, n=270), May 2020 (T2, n=637), and October 2020 (T3, n=1010). Total of 1,953 meal-kit products’ characteristics were analyzed. The results of analyzing the characteristics of meal-kit products such as price, convenience, percentage of fresh food, and product composition are as follows. The price of meal-kits has increased from mid to late 10,000 won, and the number of products that do not require cutting during cooking has increased. About half of the ingredients in the meal-kit are fresh, and the proportion of that is steadily increasing. Meat accounts for half of the main ingredients of meal-kit, and products made from various fish products are increasing. This study seeks to understand meal-kit by collecting actual data from product characteristics according to the time flow before and after COVID-19. The results of this study can be used as a practical basis for the direction of new product development and commercialization strategy.
