The Refrigerating industry contributes to not only security of food supply but national economic growth. In particular, it could raise agricultural competitiveness by keeping freshness of food, reasonable prices and stable supply. For this reason, it is expected to stimulate demand combined with enhancement of exports and imports, and leads to development of national economy.
Recently, the frequency of shipping by refer containers is increased instead of one by existing refrigerating carrier. The current situation becomes widespread rapidly from the 2000s and seems to be continued for the more.
It needs to improve the yield value in process of frozen tuna due to the fact that the number of it is limited. When tunas captured are transported to fisheries processing plant, the temperature rise is often occurred, which is the crucial reason to decrease the harvest rate in the end.
Generally, refrigerating and freezing cargo shipped by refer containers tend to be damaged easily by their temperature and humidity. For this reason, refrigerating cargo should be kept at constant temperature for its freshness, and freezing cargo should be conserved at less than the normal temperature. Furthermore, as tuna is a kind of valuable cargo, it is essential to pay special attention to damage to the process or handing.
This study analyzes the improvement of damages to frozen marine product, mainly of frozen tuna, in the process from the capture to freezing warehouse, and improvement plan to prevent unnecessary cost and time by decreasing loss of frozen fish. Thus, the aim of this study is to maximize the potential of marine fishery resources as well as to advance fishery industry and national economy.
