This study researched examines the degree of focusing on new generation target market, researched menu quality provided for workers on school affairs, workers, salary man, hospital workers(4types of occupation, 8 industrial place).
First, in the case of our country, management in group of food has not profits objecting factory, industrial place, school, hospital, dormitory, social welfare org. has object to continue supply of meat for specific-menu.
Such as this, Management problems in group supply of food focusing growth were as follows,
① Management problems have much restricted standard menu because of limit kinds of menu, and have much difficulties in providing variable standard menu in comparison with home meal service, and eating-out.
② Have a lot of difficulties to give proper menu to provided supplier's asking because of food expenditure, amount of estimate.
③ Has large indirect expenditure in structuring menu because of total expenditure restriction.
④ Have difficulties in making reliable cooking for great quality because of restriction of time and hand.
⑤ The Time for conveyance, supply of food is necessary after finishing cooking because of restriction for cooking, conveyance, supply of food.
Without these, taste quality is low due to discoloration, modification, and the unnecessary moisture of food.
⑥ The proper supply of food creates difficulty to supply of food at proper temperature.
⑦ They have much dangerous part to solve the problem for hygiene management, food poisoning because of great quality cooking
In the results from actual research, analysis based on the theoretical background were as follows.
When researched what kind of food were their favourite like Korean traditional food in the kinds of food, and they liked meats, vegetables in the kinds of side-dishes.
