Material from shell middens constitute key archaeological data which may allow us to understand, in detail, the reality of past village life. Fish bones found cracked or broken, in particular, provide us with information regarding the species, utilized parts and numbers of fish, as well as the past sea environment. This makes it possible to consider how past communities may have utilized this resource. As with other vertebrates, the remains of fish found at archaeological sites consist of only of parts, rather than whole skeletons. The reason for this is usually thought to be the result of deliberate human practices, although natural disturbance or the activities of small animals may have also played a part. In other words, in may be that only specific fish parts are found in the middens because the fish were processed, according to species type, where they were caught or at the settlement. In particular, the shell middens examined in this article yielded large quantities of shark, porgy, and swellfish head bones and spine parts - it is clear that this is the result of deliberate practices of dissection, processing, cookery, consumption, and formal ceremonies which took place at settlements, rather than natural factors. It was also possible to identify that various practices of dissection and cookery were differently applied according to the species of fish, illustrating the diverse development of fish exploitation culture. Moreover, while such cultural practices associated with fish exploitation were commonly popular throughout several regions of the south coast, there also existed regionally specific practices, which indicates that 'fishing culture' must have also played a role in the establishment and development of indigenous regional cultures.
