선사인들이 무엇을 먹고 살았는지에 대한 규명은 인류의 생존전략과 직접관련되는 고고학의 중요한 과제 중 하나이다. 고고학적으로 과거 식생활을 연구하는방법은 여러 가지가 있는데, 이 글에서 다룬 토기부착물은 직접 이용된 식물자원의유래를 찾을 수 있는 매우 중요한 자료이다. 이 글에서는 최근에 일본에서 진행되고있는 현미경을 사용한 탄화물과 잔존 녹말의 관찰, 탄소・질소 안정동위원소 분석, 古DNA분석에 대해서 실제 필자가 행한 연구사례를 중심으로 소개한다. 토기 표면에는 조리와 상관없는 여러 가지 흔적이 존재하기 때문에 토기의 라이프히스토리를 충분히 감안하여 분석 대상으로 삼을 부착물을 선별하는 것이 중요하다. 분석 시료로 적당한 것은 조리에 이용되었다고 인정되는 사용흔이 있는 토기 내면부착 탄화물이다. 토기 내면 부착 탄화물은 인경(鱗莖)・섬유・대형식물유체・편조(編組)제품・불명식물유체・판별불가능 등 다양한 형태를 나타내기 때문에 여러분석에 앞서 육안 및 현미경에 의한 관찰이 우선되어야 한다. 일본 오카야마(岡山)현 죠토(上東)유적 출토 야요이시대 토기를 대상으로 필자들이실시한 토기부착물 분석 결과는 다음과 같다. 우선 탄화물 SEM관찰을 통해서는 벼의횡세포가 확인되었기 때문에 정백(精白)이 충분히 이루어지지 않은 상태의 쌀을조리한 것으로 판단되었다. 잔존 녹말 분석을 통해서는 대부분의 녹말이 분해 혹은손상된 상태였지만 계통을 달리 하는 원형과 오각형 녹말이 같이 확인되었기 때문에한 개체 토기 안에서 복수의 대상물이 조리되었을 가능성이 지적되었다. 또한, 식물섬유와 세포조직 내부에 녹말이 확인된 사례도 있는데, 이들은 근경이나구근류에서 유래되었을 가능성도 있다. 한편, 탄소・질소 안정동위원소 분석에의해서는 조리대상물이 주로 C3 식물로 구성됨과 동시에 해산물이나 C4식물인잡곡류는 포함되지 않았음을 짐작할 수 있었다. 古DNA분석을 통해서는 벼의 DNA가확인되지 않았을 뿐만 아니라 현미경 관찰을 통해서 확인되지 않았던 밀의 DNA가검출되었다. 위와 같은 여러 방법을 구사한 종합적인 연구를 통해서 각 방법의 장점과 단점이정리되었다. 앞으로의 자료 축적과 방법의 세련화를 통해서 기술적 문제가해결된다면, 토기부착물에 대한 분석연구가 한국고고학의 여러 시대 연구에 있어서 큰공헌을 할 수 있는 방법인 점을 확인하였다.Reconstructing food and culinary practices in prehistoric times is one of the most important subjects on which archaeologists in various research fields have carried out intensive investigations. Carbonized residues attached to pottery vessels constitute important material for the investigation of human diet. In this paper the author introduces various kinds of methods for analyzing pottery residue, including observation by scanning electron microscope (SEM), ancient starch analysis, carbon/nitrogen stable isotope analysis, as well as ancient DNA analysis. Before sampling, it is crucially important to understand the life history of pottery, as well as cooking trace patterns, in order to get an accurate sample for the investigation. This is because there many factors which can contaminate the original material for cooking. Also, as attached residues can appear in various shapes, observation should precede any other analysis. The author undertook the above-mentioned, multi-disciplinary analysis on residue from Yayoi pottery that was excavated from the Joto site, in the Okayama pref. Japan. As a result, identifiable features of rice consisting of broken grains that did not have the bran fully removed were observed. Stable isotope ratios also demonstrated that there was no contribution of C4 plants. The starch grains extracted from the sampled pottery suggested that the residues might contain other starchy foods, although their association with the pottery could not be confirmed. Finally, the result from aDNA analysis showed the existence of wheat other than rice. Though some problems remain to be solved, the comprehensive method showed in this paper can promote the discussion of food and culinary practices in the various stages of the prehistoric and proto-historic periods in Korean archaeology.
