예로부터 해조류는 식품뿐만 아니라 가축 사료, 의약품, 공업용 등으로 이용되어 온 어촌사회에 있어서 중요한 경제소득원이었다. 우리나라의 어촌사회는 1920년대 말 일제의 김양식 증진 및 관련 정책이 급속히 확대되었고, 이후 1966년 ‘잡는 어업에서 기르는 어업으로 전환’되면서 수산진흥원이 양식어업과 관련된 기술지도를 진행했다. 이러한 정책 전환으로 인하여 양식어업이 발달하게 되면서 해조류는 대량생산이 가능해졌다. 특히 우뭇가사리는 해방 전후로 우리나라 수출산업에서 외화획득에 높은 비중을 차지하며 중요 수출품목으로 지정되었다. 하지만 우뭇가사리는 해녀들의 단순 채취에 의존하였으며, 양식어업은 시도에 그치게 된다.
어촌사회는 농촌사회와 달리 인위적인 경작 과정이 이루어지기 힘든 구조였다. 즉, 농촌사회는 일찍부터 자연을 길들이는 기술을 익혀왔지만, 어촌사회에서는 자연에 적응해가는 기술을 발달시켜왔다고 할 수 있다. 양식업이 도입되기 전까지 해조류는 주로 공동어장에서 지역 어민집단이나 제주도에서 출가한 해녀들에 의해 채취되었다. 이와 같은 해조류 채취방식은 지역 어민집단과 제주도 해녀들 사이에 갈등과 및 분쟁을 불러왔다. 특히 우뭇가사리는 한천의 주원료로써 환금성이 높았기에 지역 어민집단은 물론 해녀들의 생업에도 매우 중요한 자원이었다. 따라서 지역 어민집단과 해녀들의 관계 변화는 채취방식 및 어장 이용 형태의 변화를 수반하고 있다고 할 수 있다. 본 논문은 한천의 주원료인 우뭇가사리의 채취방식과 한천의 상품화 과정에 대해서 살펴보고, 우뭇가사리와 한천이 내포하고 있는 문화적 의미에 대해서 통시적으로 고찰하였다.
Since long ago, seaweed has been used not only as a food product, but as animal feed, medicine or industrial products. It has been an economically important income source in fishing villages. In the end of 1920s of Japanese colonialism, the policy of laver farming promotion had rapidly been expanded in fishing villages. With the beginning of the policy on ‘the change to fishery of farming from fishery of catching’ in 1966, the technical instructions related to cultivating fishery have been provided by fisheries promotion agency. Thanks to the policy, cultivating fishery had been developed, and thus seaweed had been cultivated massively. In particular, Gelidium amansii had accounted for a high rate of exports and had played a critical role in the acquisition of foreign currencies before and after 1945, and was designated as an important export item. Gelidium amansii, however, depended on female divers’ harvesting, and the cultivating fishery of the seaweed tried but was not developed.
Unlike agricultural communities, fishing villages have the structure in which it is hard to perform the main process of cultivation. In other words, agricultural villages have learned the techniques of domesticating nature early on, whereas fishing villages have developed the techniques of adapting themselves to nature. Before produced by cultivating fishery, seaweed had mainly been harvested in a common fishing ground jointly by female divers in Jejudo, or by a group of fishermen in local communities. In the way of harvesting by a group of fishermen in local communities or female divers in Jejudo, seaweed causes conflicts or disputes. In particular, Gelidium amansii as a main ingredient of agar, has a high value of cashability, so that it is highly related to fishermen and female divers’ activities for living. Accordingly, the change in the relation between local fishermen and female divers accompanies the changes in harvesting types and patterns of fishing ground use.
In this study, the harvesting type of Gelidium amansii as a main ingredient of agar and the commercialization process of agar were looked into. In addition, the cultural meaning of Gelidium amansii was analyzed diachronously.
