한반도는 예로부터 국토의 삼면을 둘러싸고 있는 바다를 활용해 화력으로 해수를 증발시키는 소금 생산방식인 ‘자염’을 발전시켜왔다. 다만 자염 생산에 관한 연구는 대부분이 서해안과 남해안에 집중되었으며, 동해안 지역은 상대적으로 주목받지 못했다. 이에 따라 본 연구는 동해안 내에서 비교적 자염 생산에 적합한 조건을 갖춘 경상북도 영덕군에 주목해 지역의 전통 자염 생산방식 및 그와 관련된 여러 역사적ㆍ문화적 맥락을 파악하고자 하였다.
영덕지역은 여타 동해안 지역과 마찬가지로 갯벌이 발달하지 않아 염전을 조성하는 것이 어려웠다. 영덕 지역민들은 이러한 지형적 한계를 극복하기 위해 바닷가와 조금 떨어진 토지에 인위적으로 점토를 깔아 바닥을 만들고, 인력을 통해 해수를 공급하는 양빈식 염전방식을 발전시켜왔다. 이에 따라 영덕지역에서는 해안가 평야를 중심으로 다수의 염전이 분포하였으며, 지역민들은 오래전부터 자염을 생산하고 유통해왔다. 또한 영덕지역에서 생산된 자염은 지역 내에서 소비될 뿐만 아니라, 동해안에서 생산되는 어물과 함께 소금이 생산되지 않는 경상북도 내륙으로 유입되었다. 이를 통해 영덕지역의 전통 자염 문화는 지역의 자연환경을 지혜를 통해 극복해온 전통 지식이자, 지역의 중심지적 특성을 보여주는 문화유산임을 알 수 있다.
Since ancient times, the Korean Peninsula has developed ‘Jayum,’ a salt production method that evaporates seawater by firepower by utilizing the sea surrounding three sides of the country. However, most of the research on Jayum production was concentrated on the west and south coasts, and the east coast area received relatively little attention. Accordingly, this study focused on Yeongdeok, Gyeongsangbuk-do, which has conditions suitable for Jayum production within the east coast. Through this, this study attempted to grasp the local traditional Jayum production method and various historical and cultural contexts related thereto.
Like other east coast areas, the Yeongdeok area did not develop tidal flats, making it difficult to create salt fields. In order to overcome these topographical limitations, Yeongdeok locals have developed a salt production method that artificially lays clay on land a little far from the beach to make a floor and supplies seawater through manpower. Accordingly, a number of salt fields have been distributed in the Yeongdeok area around the coastal plain, and local people have long produced and distributed Jayum. In addition, the salt produced in Yeongdeok was not only consumed within the region, but also flowed into the inland of Gyeongsangbuk-do, where salt was not produced, along with fish produced on the east coast. The traditional Jayum Culture in Yeongdeok is a traditional knowledge that has overcome the local natural environment through wisdom and a cultural heritage that shows the central characteristics of the region.
