본 연구는 프랜차이즈 정보공개서 자료에 기반을 두어 한식 프랜차이즈 브랜드 간 상대적 효율성을 분석하였으며, 이를 위해 Tofallis의 프로파일링 기법 및 Wagner의 후방접근법을 적용하여 자료포락분석 기법의 투입 및 산출변수를 선정한 후 CCR, BCC, 초효율성 모형을 이용하여 기술적 효율성, 규모의 효율성, 초효율성을 측정하고 각 DMU별 참조집단을 파악하였다. 본 연구의 결과를 정리하면 첫째, CCR 모형 기준 효율적인 브랜드는 총 6개이며, BCC 모형 기준 효율적인 브랜드는 해당 6개 브랜드에 12개 브랜드가 추가된 총 18개 브랜드임을 확인하였다. 둘째, BCC 모형 분석 결과 PTE와 SE의 평균값이 각각 0.892, 0.687로 비효율의 주된 원인이 규모 관련 비효율인 경우가 순수 기술 관련 비효율보다 더 많음을 확인하였다. 따라서 비효율적인 브랜드의 경우 벤치마킹 브랜드 정보를 참조하여 경영의 효율성을 향상시키는 것이 필요하다. 셋째, 규모의 경제 분석 결과 6개 브랜드가 최적 규모(CRS)에서 운영 중이었으며, 나머지 40개 브랜드는 DRS 상태임을 확인하였다. 넷째, 효율성에 영향을 미치는 투입/산출변수는 초기투자비용, 가맹점별 연평균 매출액, 임직원 수임을 확인하였다.
This paper aims to provide useful information on future Korean restaurant franchisees' franchising decision making using DEA analysis. For this purpose, Tofallis' profiling method as well as Wagner’s stepwise variable selection method have been used for selecting the DEA model input / output variables. The finally selected input variable is initial investment while the finally selected output variables are promotion budget, annual average sales amount per store, number of new member stores, number of franchisee stores, number of employees, net profit, total amount of capital, and brand age. We analyzed 46 Korean restaurant franchisers having more than 80 shops in Korea. We found the follow things: First, based on the BCC model, the average value of PTE and SE are 0.892 and 0.687, respectively, meaning that the main reason for inefficiency is scale-related inefficiency rather than pure technology-related inefficiency. Second, 6 franchisers are efficient, while other 40 franchisers are in DRS state. Second, PTE caused huge fluctuations among efficiency scores of chicken franchisers. Third, efficiency was affected by initial investment, average sales amount per store, and number of employees, and not by any other output variable.
