This study investigated the nutritional and functional characteristics of Quercus acutissima (sawtooth oak) and Quercus acuta (Red-wood evergreen oak) fruits, separating inner (kernel) and outer (hull) parts for analysis. Proximate analysis revealed that Q. acuta exhibited higher carbohydrate (hull: 77.3%) and dietary fiber content (hull: 74.2%) compared to Q. acutissima (carbohydrate in kernel: 54.7%; fiber in kernel: 22.7 g/100 g). In contrast, vitamin A was detected highest in Q. acutissima kernel (44.1 µgRE/100 g), showing potential for antioxidant functionality. LC-MS/MS profiling revealed significantly higher levels of functional compounds in Q. acuta, particularly in the hull. Gallic acid was the most abundant, with 753.1 mg/100 g in the hull, followed by Pyrogallol (40.6 mg/100 g) and Shikimic acid (10.1 mg/100 g). Q. acutissima showed lower levels of these compounds, with Gallic acid at 114 mg/100 g, Pyrogallol at 7.3 mg/100 g and Shikimic acid at 0.5 mg/100 g in the hull. These results suggest that Q. acuta fruit, especially the hull, offers high potential as a fiber- and antioxidant-rich functional food source, while Q. acutissima kernel may serve as a source of vitamin A for immune and eye health.
