This study compared functional properties of purple sweet potato (Ipomoea batatas L.) leaves at four growth stages (very small, small, medium, large). Leaf powders were extracted with 70% ethanol and analyzed for total phenolic content (TPC), anti-oxidant activity (DPPH radical scavenging ability, ABTS radical scavenging activity, SOD activity), anti-diabetic potential (-glucosidase and -amylase inhibition activity), anti-obesity activity (pancreatic lipase inhibition), and anti-microbial activity against Streptococcus mutans. Leaves at the early growth stage (very small) exhibited superior activity in most functional indicators.
In particular, the total phenolic content of the very small leaves was 232.47±4.06 mg GAE/g, markedly higher than those of the other size groups (77 96 mg GAE/g), and the very small leaves also showed the strongest DPPH radical scavenging activity and SOD activity. By contrast, ABTS radical-scavenging activity displayed an opposite trend: the IC50 of the very small leaves was relatively high, suggesting lower activity, which is likely attributable to differences in the solubility profile of antioxidant compounds in the samples. -glucosidase inhibitory activity was strongest in the very small leaves, whereas -amylase inhibitory activity increased with leaf size. Pancreatic lipase inhibition was likewise greatest in the very small leaves. No significant differences in antibacterial activity against S. mutans were observed among the leaf size groups.
These findings indicate that young purple sweet potato leaves are a promising source of bioactive compounds for functional food.*표시는 필수 입력사항입니다.
